How to backup and save multiple iPhone 5 backup file on Mac without overwrite the old backup

 
“I connected my iPhone 5 to Mac it started backing up immediately. The old backup file were overwritten and deleted, Now the only backup I can restore to is today’s, I realize it's too late now, I am wondering is there any way to backup iPhone 5 data without overwritten the old backup file?” 

How to prevent iTunes making backups automatically? 
In iTunes > Preferences > Devices > check Prevent iPods, iPhones, and iPads from syncing automatically
